Hittin and Sulimaniyah, Riyadh

Kabsa the way Najdi homes cook it, slowly.

Naimi lamb from Al-Kharj farms, wild ghee from Qassim and samr wood lit from noon. We cook the dishes of the Najdi home as we grew up with them, served in a calm dining room and private majlis rooms.

Open daily from 1 pm, and after prayer on Fridays.

Named after the palm, cooked like home.

An ithq is the whole cluster of dates on the palm: many fruits on one stalk, like a table that gathers the household.

Cooking starts before noon. Jareesh soaks overnight, the kabsa spice is toasted in our own kitchen every other day, and the lamb cooks slowly until it falls from the bone.

Our dining room takes after the mud houses of Diriyah: sand-coloured walls, narrow windows and warm light. A family section behind timber screens, an individuals section, and private majlis rooms for gatherings.
